Most of these recipes come from our cookbooks but there are so many, we can never list them all. Our cookbooks are great collections of terrific recipes and very affordable. Try them out!
Mexican Corn and Black Bean Salad
Prep time: 10 minutes
Chill time: 20 minutes
Makes 6 servings
2 cans of black beans, rinsed and drained (15 oz ea.)
2 cans Mexicorn, drained (11 oz ea.)
2/3 cup olive oil and vinegar dressing
1/2 cup sliced green onion
1/2 cup chopped tomatoes
2 tsp. Mexican seasoning
Chopped fresh cilantro
Stir all ingredients together in a bowl. Stir in cilantro last. Cover and chill for at least 20 minutes

White & Wild Rice Casserole
Prep time: 10 minutes
Makes 4 servings
1 pkg Uncle Ben's White & Wild Rice
1 medium onion
1 small pkg cut green beans
1 jar chopped pimentos (larger jar)
1 can sliced water chestnuts
1 cut grated cheddar
I cup mayonnaise
1 can cream of celery soup
Cook rice according to package directions and set aside. Chop and saute onion for about 10 minutes and set aside. Cook the cut green beans and set aside. Drain the water chestnuts and cut each piece in half.
In a large bowl, mix all ingredients together well. Salt and pepper to taste. Put the mixture into a greased baking dish. Cook at 350º for 30 minutes until hot and bubbly. Serve immediately with a nice crusty bread.
