Almond Bonbons

1-1/2 cups all-purpose flour
1/2 cup butter or margarine, softened
1/3 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla
1/2 (7 ounce) package almond paste (7- or 8-ounce size)
Almond Glaze -- (recipe follows)
Sliced almonds -- toasted, if desired (see Notes)


Almond Glaze
1 cup powdered sugar
1/2 teaspoon almond extract
4 teaspoons milk (4 to 5 teaspoons)


Heat oven to 375º. Beat flour, butter, powdered sugar, milk and vanilla in large bowl with electric mixer on medium speed, or mix with spoon. Cut almond paste into 1/2-inch slices; cut each slice into fourths.

Shape 1-inch ball of dough around each piece of almond paste. Gently roll to form ball. Place about 1 inch apart on ungreased cookie sheet. Bake 10 to 12 minutes or until set and bottom is golden brown.

Remove from cookie sheet to wire rack. Cool completely. Dip tops of cookies into Almond Glaze. Garnish with sliced almonds.

For Almond Glaze, mix all ingredients until smooth and spreadable.

Apple Fritters/deep Fried

1 lg Egg; beaten
1 cup Milk
1 cup Apples; * see note
1/4 cup Sugar
1/4 tsp Salt
1 tsp Greated orange peel
3 tbsp Orange juice
2 tsp Vanilla extract
2 cup All-purpose flour
1 tbsp Baking powder
Vegetable oil
Confectioner's sugar
* unpeeled apple which is finely diced or grated.


In mixing bowl, combine beaten egg, milk, apple, sugar, salt, orange peel, orange juice and vanilla. Sift together the flour and baking powder; fold into the apple mixture, stir just until all flour is moistened. Drop batter by rounded teaspoon into hot oil (350 degrees).

Fry until deep golden brown, about 3-4 minutes, turning once. Drain fritters thoroughly on paper towels. Roll in sugar or sift the sugar over the tops. Yield: about 40 fritters.

Bailey's Irish Cream Bread

Serving Size : 1
Low Fat Breads

1-1/4 cups Water -- very warm
1 package Yeast
1 cup Oats
3 cups Bread flour
1 teaspoon Salt
1/3 cup Honey
2 tablespoons Bailey's irish cream


Put ingredients in pan in order listed, select "white bread" setting on machine and press Start.
The bread doesn't rise much, but the texture is great.
